Healthy Stuffed Bell Peppers

Colorful and nutritious stuffed bell peppers packed with quinoa, black beans, and corn, perfect for a healthy meal.

Ingredients

  • 4 large bell peppers
  • 1 cup quinoa, rinsed and cooked
  • 1 can black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup diced tomatoes (optional)
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. Combine the cooked quinoa, black beans, corn, cumin, chili powder, salt, pepper, and diced tomatoes in a large bowl.
  4. Stuff each bell pepper generously with the quinoa mixture.
  5. Place the stuffed peppers upright in a suitable baking dish and cover with foil.
  6. Bake in the preheated oven for 25 minutes.
  7. If using cheese, remove the foil and sprinkle the cheese on top, returning to the oven to bake for an additional 10 minutes.
  8. Plate the stuffed peppers and serve warm.

Notes

You can customize the filling with different veggies or grains, and serve with a side salad or cornbread.
