Honey Garlic Roasted Vegetables

A vibrant medley of roasted vegetables drizzled with a sweet and savory honey garlic glaze.

Ingredients

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 cup carrots, sliced
  • 1 red bell pepper, sliced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Preheat the oven to 425°F.
  2. Combine the broccoli, cauliflower, carrots, bell pepper, and minced garlic in a large bowl.
  3. Drizzle with olive oil and honey, then sprinkle with salt and black pepper.
  4. Toss everything until the vegetables are evenly coated.
  5. Spread the vegetables in a single layer on a baking sheet.
  6. Roast for 20 to 25 minutes, turning halfway through.
  7. Remove from the oven and sprinkle with chopped parsley before serving.

Notes

Marinate the vegetables in olive oil and honey for 30 minutes before roasting for deeper flavor. Feel free to mix in different vegetables or add spices for variation.
