A sweet and savory Hawaiian grilled chicken dish marinated with pineapple, ginger, and soy sauce.

Ingredients

  • 1/2 cup soy sauce
  • 1/4 cup ketchup
  • 1/4 cup brown sugar
  • 1/4 cup honey
  • 1/4 cup rice vinegar
  • 1/4 cup pineapple juice
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1/2 teaspoon ground black pepper
  • 4 chicken breasts

Instructions

  1. Create the Marinade: In a medium-sized bowl, combine the soy sauce, ketchup, brown sugar, honey, rice vinegar, pineapple juice, and sesame oil. Whisk the ingredients together until the sugar is dissolved and the mixture is smooth.
  2. Add Aromatics: Add the minced garlic, grated ginger, and ground black pepper to the bowl and whisk again until everything is well incorporated.
  3. Marinate the Chicken: Place the chicken breasts in a shallow dish or resealable plastic bag. Pour the marinade mixture over the chicken breasts, making sure they are evenly coated. Seal the dish or bag and refrigerate for at least 30 minutes, but preferably 2 to 4 hours.
  4. Preheat the Grill: Preheat your grill or grill pan to medium-high heat.
  5. Grill the Chicken: Once the grill is hot, remove the chicken breasts from the marinade. Grill for about 6 to 7 minutes per side, until the internal temperature reaches 165°F (75°C).
  6. Simmer the Marinade: Pour the reserved marinade into a small saucepan and bring to a simmer over medium heat for about 5 minutes.
  7. Rest the Chicken: Once cooked, remove the chicken from the grill and let it rest for a few minutes.
  8. Brush with Marinade: Brush the cooked chicken with the thickened marinade before serving for extra flavor.
  9. Serve with Style: Serve the Huli Huli Chicken hot, optionally garnished with chopped green onions or sesame seeds.

Notes

Marinate chicken for at least 30 minutes, but 2 to 4 hours is ideal for best flavor.
