This Juicy Oven-Roasted French Garlic Chicken is filled with garlic and thyme, providing a delightful meal perfect for family gatherings and special occasions.

  • 1 whole chicken
  • 4 cloves garlic, minced
  • 1/2 cup unsalted butter, softened
  • 2 tablespoons fresh thyme leaves
  • 1 tablespoon smoked paprika
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 lemon, halved
  • 1 cup chicken broth

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a small bowl, combine the minced garlic, softened butter, fresh thyme leaves, smoked paprika, kosher salt, and freshly ground black pepper.
  3. Pat the whole chicken dry using paper towels.
  4. Take half of the garlic butter mixture and rub it under the skin.
  5. Drizzle the chicken with olive oil and place the halved lemon inside the cavity.
  6. Place the chicken on a rack in a roasting pan and roast it in the preheated oven for about 1 hour to 1 hour 15 minutes.
  7. Once out of the oven, let the chicken rest on a cutting board for about 10 minutes.
  8. While the chicken is resting, place the roasting pan over medium heat.
  9. Carve the chicken, drizzle it with the pan sauce, and serve immediately.

Notes

For best results, use a meat thermometer to ensure the chicken is cooked through without being dry. You can pair it with creamy mashed potatoes or fresh seasonal vegetables.
