Key Lime Angel Food Cake

A light and fluffy angel food cake infused with zesty key lime, perfect for summer gatherings.

Ingredients

  • 1 cup cake flour
  • 1 1/2 cups granulated sugar
  • 10 large egg whites
  • 1 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 1 teaspoon key lime zest
  • 4 tablespoons key lime juice, divided
  • 1 teaspoon vanilla extract
  • 1/2 cup confectioners sugar
  • 2 tablespoons milk

Instructions

  1. Preheat the oven to 350 degrees F and position a rack in the lower third.
  2. Sift the cake flour with 3/4 cup granulated sugar into a bowl and set aside.
  3. Beat the egg whites with the cream of tartar and salt on medium speed until frothy.
  4. Add the vanilla extract and key lime zest, then gradually add the remaining 3/4 cup granulated sugar until stiff peaks form.
  5. Fold the dry flour mixture into the meringue in three additions.
  6. Incorporate 2 tablespoons of the key lime juice, then pour the batter into an ungreased 10-inch tube pan.
  7. Bake for 35 to 40 minutes until golden and springs back when lightly touched.
  8. Cool the cake by inverting the pan on a bottle for about 1 hour.
  9. Make the glaze by whisking confectioners sugar with milk and remaining key lime juice.
  10. Release the cake by running a knife around the edge and drizzle glaze over the top before serving.

Notes

Serve with fresh berries or whipped cream for an extra treat. Store leftovers in an airtight container for up to 2 days.
