A delightful tropical dish featuring tender chicken in a creamy coconut lime sauce, perfect for everyday dinners or impressing guests.

  • 1 can coconut milk
  • 2 limes (juiced and zested)
  • 2 cloves garlic (minced)
  • 1 inch ginger (grated)
  • 1/4 cup fresh cilantro (chopped)
  • 1 teaspoon chili flakes (or to taste)
  • Salt and pepper to taste
  • Steamed jasmine rice or sautéed vegetables (for serving)

Instructions

  1. Sauté the aromatics: In a large skillet over medium heat, add a little oil and sauté the minced garlic and grated ginger until fragrant for about 1-2 minutes.
  2. Brown the chicken: Season the chicken breasts with salt, pepper, and chili flakes, then add them to the skillet. Cook until browned, about 4-5 minutes per side.
  3. Add coconut milk and lime: Pour in the coconut milk and add the lime juice and zest to create a creamy sauce.
  4. Simmer to perfection: Bring the mixture to a gentle simmer, cover, and cook for about 15-20 minutes, or until the chicken reaches 165°F internally.
  5. Finishing touches: Stir in the chopped cilantro before serving for added freshness and color.
  6. Serve and enjoy: Serve the chicken with steamed jasmine rice or sautéed vegetables to complete the meal.
