Chicken Spinach Mushroom Low Carb Oven Dish

A simple, wholesome, and flavorful low-carb oven dish featuring chicken, spinach, and mushrooms topped with melted cheese.

Ingredients

  • 2 cups fresh spinach, chopped
  • 2 cups mushrooms, sliced
  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil in a large skillet over medium heat. Add the sliced mushrooms and sauté for about 5-7 minutes, or until soft and browned.
  3. Add the chopped spinach to the skillet and sauté for an additional 2-3 minutes, or until wilted. Remove the skillet from heat and set aside.
  4. Season the chicken pieces in a mixing bowl with garlic powder, onion powder, oregano, paprika, salt, and pepper. Mix well to coat the chicken evenly with the spices.
  5. Spread the seasoned chicken in an even layer in a large baking dish, then top with the sautéed spinach and mushrooms.
  6. Sprinkle the shredded mozzarella cheese evenly over the top, followed by the grated Parmesan cheese. If desired, add red pepper flakes for heat.
  7. Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  8. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is bubbly and golden brown.
  9. Let it cool for a few minutes before serving. Enjoy your low carb oven dish!

Notes

Pairs nicely with a light salad or roasted vegetables. Leftovers can be stored in an airtight container for up to 3 days.
