Juicy Oven-Roasted French Garlic Chicken

A deliciously tender and flavorful roast chicken infused with garlic and thyme, perfect for family gatherings.

Ingredients

  • 1 whole chicken
  • 4 cloves minced garlic
  • 4 tablespoons unsalted butter, softened
  • 2 tablespoons fresh thyme leaves
  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil
  • 1 lemon, halved
  • 1 cup chicken broth

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Combine the minced garlic, butter, thyme, paprika, salt, and pepper in a small bowl.
  3. Pat the chicken dry with paper towels.
  4. Loosen the skin over the chicken’s breast and thighs.
  5. Rub half of the garlic butter mixture under the skin and the rest on the exterior.
  6. Drizzle the chicken with olive oil and place the lemon halves inside the cavity.
  7. Roast the chicken for 1 hour to 1 hour 15 minutes, or until the internal temperature reaches 75°C (165°F).
  8. Let the chicken rest for 10 minutes after removing it from the oven.
  9. Create a quick pan sauce with the chicken broth by simmering in the roasting pan.
  10. Carve the chicken, drizzle it with the pan sauce, and serve immediately.

Notes

Store leftovers in an airtight container for up to 3 days. Can also be frozen for up to 3 months.
