A delicious and indulgent baked banana French toast casserole that can be prepared overnight for a simple yet impressive breakfast.

  • 8 large eggs
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1/3 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 3 ripe bananas
  • 2 tablespoons unsalted butter, melted
  • 1/2 cup chopped pecans
  • Maple syrup, to taste

Instructions

  1. Preheat your oven to 350°F and generously grease a 9×13 inch baking dish with the melted butter.
  2. Slice the French bread into 1-inch thick pieces and arrange them in the prepared baking dish.
  3. Prepare the ripe bananas by peeling and slicing them into rounds.
  4. Mix together the eggs, milk, heavy cream, granulated sugar, brown sugar, vanilla extract, cinnamon, and salt in a large bowl.
  5. Soak the bread by pouring the egg mixture evenly over the arranged bread and banana layers.
  6. Refrigerate the baking dish covered with foil overnight, or for at least 6 hours.
  7. Remove the dish from the refrigerator, uncover it, and sprinkle chopped pecans over the top.
  8. Bake uncovered for 45 to 55 minutes, until the custard is set and the top is golden brown.
  9. Let the casserole rest for 10 minutes before serving.
  10. Drizzle with maple syrup to taste before serving.

Notes

Ensure your bread is a day or two old for better custard absorption. Adjust sweetness based on preference, and feel free to add dark chocolate chips or nutmeg for extra flavor.
