A classic Italian dessert that is creamy and decadent yet surprisingly simple to make.

Ingredients

Scale
  • 500 ml heavy cream
  • 100 ml whole milk
  • 80 g granulated sugar
  • 1 vanilla bean
  • 7 g powdered gelatin
  • 2 tbsp cold water
  • Fresh berries for serving
  • Mint leaves for garnish

Instructions

  1. Bloom the gelatin by sprinkling it over cold water in a small bowl and letting it sit for 5 minutes.
  2. Prepare the vanilla by splitting the vanilla bean lengthwise and scraping out the seeds.
  3. Combine heavy cream, whole milk, granulated sugar, vanilla seeds, and the vanilla pod in a saucepan.
  4. Heat the mixture over medium heat, stirring until the sugar dissolves and it just begins to simmer.
  5. Remove the saucepan from heat, discard the vanilla pod, and whisk in the bloomed gelatin until fully dissolved.
  6. Strain the mixture through a fine mesh sieve into a jug to remove any lumps.
  7. Pour the strained mixture into lightly oiled ramekins or molds and let them cool to room temperature.
  8. Chill for at least 4 hours or until set.
  9. Serve by inverting molds onto plates and garnishing with fresh berries and mint leaves.
