  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

  2. Whisk together the flour, sugar, baking powder, baking soda, and salt in a large bowl.
  3. Beat the eggs in a separate bowl, then add the milk, sourdough discard, melted butter, and vanilla extract. Whisk until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Lightly grease the preheated waffle iron with cooking spray or melted butter.
  6. Pour the batter onto the waffle iron, using about 1/2 to 3/4 cup per waffle.
  7. Close the waffle iron and cook until golden brown and crisp, about 4 to 6 minutes.
  8. Carefully remove the waffles and serve immediately or keep warm in a low oven.

Notes

For extra crispy waffles, allow them to cook a little longer. You can also experiment by adding chocolate chips or fruits to the batter.
