Delightful bars that encapsulate the essence of traditional strawberry shortcake in a convenient form, perfect for summer gatherings.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 4 cups hulled strawberries, sliced
  • 2 tablespoons granulated sugar (for strawberries)
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Whisk together the flour, sugar, baking powder, and salt in a large mixing bowl.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Whisk together the egg, vanilla, and milk in a separate bowl, then stir into the flour mixture until just combined.
  5. Press half of the dough into the prepared baking pan and bake for 15 minutes.
  6. Slice the strawberries and toss them with 2 tablespoons of sugar.
  7. Spread the sugared strawberries over the warm crust.
  8. Crumble the remaining dough over the strawberries and bake for an additional 25 to 30 minutes.
  9. Cool the bars slightly and whisk together the powdered sugar and milk to make a glaze.
  10. Drizzle the glaze over the cooled bars, let set, slice, and serve.
