Delicious and portable Strawberry Shortcake Bars that capture the essence of summer desserts.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, cold and cubed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/3 cup milk
  • 2 cups fresh strawberries, hulled and sliced
  • 2 tablespoons granulated sugar
  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper.
  2. Combine the flour, granulated sugar, baking powder, and salt in a large bowl.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Whisk together the egg, vanilla extract, and milk in a separate bowl.
  5. Stir the wet mixture into the flour mixture until just combined.
  6. Press half of the dough into the prepared pan and bake for 15 minutes.
  7. Toss the fresh strawberries with 2 tablespoons of granulated sugar in a bowl.
  8. Spread the sugared strawberries evenly over the baked crust.
  9. Crumble the remaining dough over the strawberries and return to the oven for 25 to 30 minutes.
  10. Whisk together the powdered sugar and milk to create a glaze after cooling slightly, and drizzle over the bars.

Notes

Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. Freeze for up to 3 months and thaw overnight in the fridge before serving.
