A comforting and savory Teriyaki Chicken Bowl that brings together tender chicken, vibrant vegetables, and fluffy rice in a delightful homemade teriyaki sauce.

  • 1 lb boneless, skinless chicken thighs
  • 1/4 cup soy sauce
  • 1/4 cup water
  • 2 tbsp honey
  • 2 tbsp brown sugar
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 2 cloves minced garlic
  • 1 tsp minced ginger
  • 2 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 4 cups steamed rice
  • 2 cups mixed vegetables (broccoli, bell peppers, carrots)
  • Sesame seeds and sliced green onions for garnish

Instructions

  1. Prepare the Teriyaki Sauce: Whisk together the soy sauce, water, honey, brown sugar, rice vinegar, sesame oil, minced garlic, and ginger in a bowl until well combined.
  2. Chop the Chicken: Cut the boneless chicken thighs into bite-sized pieces.
  3. Sauté the Chicken: In a large pan, heat 1 tablespoon of vegetable oil over medium-high heat. Add the chicken pieces and cook until browned, about 6-8 minutes.
  4. Steam the Vegetables: Prepare and steam your choice of vegetables until tender but vibrant. Set aside.
  5. Combine Chicken with Teriyaki Sauce: Pour the prepared teriyaki sauce over the chicken and stir to coat.
  6. Thicken the Sauce: Mix cornstarch with water and add to the pan, stirring until the sauce thickens, about 2 minutes.
  7. Sauté the Vegetables: In another pan, heat the remaining tablespoon of vegetable oil and sauté the steamed vegetables briefly.
  8. Assemble the Bowls: Begin with steamed rice, top with teriyaki chicken, and add sautéed vegetables.
  9. Garnish and Serve: Sprinkle with sesame seeds and sliced green onions before serving.

Notes

For lower sodium, use low-sodium soy sauce. Feel free to use tofu or shrimp instead of chicken for variations.
