These Taco Ranch Tortilla Cup Bites are crispy tortilla cups filled with seasoned ground beef and melted cheese, perfect for parties.

Ingredients

Scale
  • Small flour tortillas (6-inch or 8-inch, cut)
  • 1 pound ground beef
  • 1 packet taco seasoning (about 1 ounce)
  • 1 packet ranch seasoning mix (about 1 ounce)
  • 1/2 cup water
  • 1–2 tablespoons shredded cheese (Mexican blend, sharp cheddar, or Monterey Jack)
  • Optional toppings: shredded lettuce, diced tomatoes, chopped red onion, sour cream or Greek yogurt, salsa, sliced jalapeños, fresh cilantro, guacamole

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 12-cup standard muffin tin with cooking spray.
  2. Bake the empty tortilla cups for 5-7 minutes, or until they are lightly golden and slightly crisp.
  3. Heat a large skillet over medium-high heat. Add the ground beef and cook until fully browned, about 6-8 minutes. Drain any excess fat.
  4. Stir in the taco seasoning and ranch seasoning mix. Add the water and bring to a simmer. Cook for 3-5 minutes until the liquid has mostly absorbed.
  5. Spoon about 2 tablespoons of the seasoned ground beef filling into each pre-baked tortilla cup. Sprinkle cheese over each cup.
  6. Return the muffin tin to the oven and bake for an additional 8-10 minutes, or until the cheese is melted and bubbly.
  7. Carefully remove the muffin tin from the oven and let the cups cool for a few minutes before transferring to a serving platter. Add your favorite toppings.

Notes

For a vegetarian option, replace ground beef with lentils or finely chopped mushrooms.
