Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 3/4 cup buttermilk
  • 1 large egg
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Oil for frying
  • 2 cups powdered sugar (for glaze)
  • 2–3 tablespoons milk (for glaze)
  • 1 teaspoon vanilla extract (for glaze)

Instructions

  1. Whisk together the dry ingredients in a large bowl: flour, sugar, baking powder, salt, and nutmeg.
  2. Combine the wet ingredients in another bowl: buttermilk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
  4. Roll the dough out on a floured surface to about 1-inch thick and cut into squares.
  5. Heat oil in a deep fryer or large pot to 350°F (175°C).
  6. Fry the squares in batches until golden brown on each side, about 2-3 minutes.
  7. Remove and drain on paper towels.
  8. Prepare the glaze by whisking together powdered sugar, milk, and vanilla extract until smooth.
  9. Dip each warm beignet square into the glaze.
  10. Serve immediately and enjoy the warm, sweet treat.

Notes

For extra flavor, add cinnamon to the glaze or pair with fresh berries.
