A delightful twist on a classic, these Caesar Chicken Salad Pita Pockets are filled with creamy dressing, crunchy romaine, and seasoned chicken, making for a satisfying lunch or dinner.

  • 2 cups cooked chicken breast, diced (about 2 medium breasts)
  • 1/2 cup Caesar dressing (store-bought or homemade)
  • 1/4 cup grated Parmesan cheese
  • 1 cup romaine lettuce, chopped
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup croutons (optional for added crunch)
  • Salt and pepper, to taste
  • 4 whole wheat pita pockets or regular pita bread
  • Olive oil spray (optional, for toasting)
  • Additional grated Parmesan cheese (for garnish, optional)
  • Fresh parsley or basil, chopped (for garnish, optional)

Instructions

  1. Begin by preparing your chicken. If using rotisserie chicken, shred the meat into bite-sized pieces. If cooking from scratch, grill or boil two medium chicken breasts until fully cooked, about 15-20 minutes. Allow to cool before dicing.
  2. In a large mixing bowl, combine the diced chicken, Caesar dressing, grated Parmesan cheese, chopped romaine lettuce, and halved cherry tomatoes. Mix gently until everything is evenly coated.
  3. Season the mixture with salt and pepper to taste. Taste as you go to ensure the balance is just right.
  4. While the salad is resting, prepare the pita pockets. Lightly spray each pita with olive oil and heat them in a dry skillet over medium heat for about 2-3 minutes on each side.
  5. Once the pita pockets are prepared, carefully open each one to create a pocket. Using a spoon, generously fill each pita pocket with the Caesar chicken salad mixture.
  6. If desired, top with additional grated Parmesan cheese and chopped fresh parsley or basil for garnish.
  7. Serve immediately and enjoy the delightful crunch and creamy flavors. Store leftovers separately to maintain freshness.

Notes

For quicker prep, use pre-cooked rotisserie chicken. You can customize the recipe with different proteins or vegetables as desired.
