A comforting cheeseburger soup with pasta, merging the flavors of a classic cheeseburger in a warm bowl of soup.

Ingredients

Scale
  • 1 lb Ground Beef
  • 1 Onion, chopped
  • 2 Garlic cloves, minced
  • 2 Carrots, diced
  • 2 Celery stalks, diced
  • 4 cups Beef Broth
  • 1 cup Pasta (small shapes like elbow macaroni or shells)
  • 1 cup Cheddar Cheese, shredded
  • 1 cup Milk or Cream
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1 tsp Paprika
  • 1 tbsp Worcestershire Sauce (non-alcoholic version)

Instructions

  1. In a large pot over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.
  2. Stir in the chopped onions, carrots, and celery. Cook for about 5 minutes until the vegetables begin to soften.
  3. Add minced garlic and cook for an additional minute until fragrant.
  4. Pour in the beef broth and bring it to a simmer. Stir in the milk or cream, and then season with salt, pepper, and paprika. If you’re using Worcestershire sauce, add it now.
  5. Add the pasta to the pot and cook according to package instructions until al dente, usually around 8-10 minutes.
  6. Once the pasta is cooked, reduce the heat to low, and stir in the shredded cheddar cheese until melted and creamy.
  7. Taste the soup and adjust the seasoning as necessary. If you like it spicier, feel free to add some hot sauce!
  8. Ladle the soup into bowls, and if desired, top with additional shredded cheese and chopped green onions for garnish.

Notes

This soup is fantastic on its own but can be paired with crusty bread or a side salad.
