Ingredients
Scale
1 1/2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
1 cup sugar
4 packages (8 ounces each) cream cheese, softened
1 teaspoon vanilla extract
4 large eggs
1 cup fresh strawberries, pureed
1/2 cup chocolate syrup
Instructions
Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan with butter or cooking spray.
In a medium bowl, combine graham cracker crumbs and melted butter. Press firmly into the bottom of the prepared pan to form the crust.
In a large mixing bowl, beat the softened cream cheese and sugar together until smooth. Add vanilla extract and eggs one at a time, mixing well after each addition.
Once your filling is smooth, divide it between two bowls. In one, fold in the pureed strawberries; in the other, stir in the chocolate syrup.
Pour the strawberry batter over the crust, and dollop the chocolate batter on top. Swirl together gently with a knife or skewer.
Bake in the preheated oven for about 55-60 minutes, until the center is just set but still jiggles slightly.
Allow to cool at room temperature, then refrigerate for at least 4 hours before serving.
Notes
Serve with whipped cream and chocolate syrup, or pair with fresh berries or ice cream.
