Delightful Mexican street corn served in individual cups, perfect for sharing or snacking.

Ingredients

  • 4 cups fresh corn kernels (or canned corn, drained)
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup crumbled cotija cheese
  • 1 teaspoon chili powder
  • 2 tablespoons lime juice
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Combine the corn, mayonnaise, sour cream, cotija cheese, chili powder, lime juice, salt, and pepper in a large bowl.
  2. Mix well until all ingredients are incorporated.
  3. Adjust the seasoning to your liking, adding more lime or mayonnaise as needed.
  4. Serve the creamy corn mixture in cups.
  5. Garnish with chopped cilantro before enjoying.

Notes

These cups can be made ahead of time; just add cilantro right before serving. Great with grilled tacos or margaritas.
