Ingredients

  • Cremini Mushrooms
  • White button mushrooms (optional)
  • Shiitake mushrooms (optional)
  • Dried porcini mushrooms (optional)
  • Short Pasta Shapes (penne, rotini, or farfalle)
  • Heavy Cream
  • Half-and-half (optional)
  • Unsweetened cashew cream (optional)
  • Sun-Dried Tomatoes
  • Fresh Spinach
  • Garlic
  • Onion
  • Vegetable Broth or Chicken Broth
  • Parmesan Cheese
  • Red Pepper Flakes (optional)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add your chosen pasta and cook according to package directions until it’s al dente. Drain the pasta, reserving about a cup of the starchy pasta water. Set the drained pasta aside.
  2. Sauté Aromatics: Heat a generous drizzle of olive oil in a large, deep skillet or Dutch oven over medium heat. Add your chopped onion and cook for 3-5 minutes until softened and translucent. Stir in the minced garlic and cook for another minute until fragrant.
  3. Brown the Mushrooms: Add your sliced cremini mushrooms to the skillet. Cook them in batches if necessary to ensure they brown nicely. Sauté for 5-7 minutes until they release their moisture and develop a golden-brown color.
  4. Build the Flavor Base: Stir in the chopped sun-dried tomatoes and a pinch of red pepper flakes with the mushrooms. Cook for another minute to allow their flavors to meld.
  5. Deglaze and Create the Sauce: Pour in the vegetable or chicken broth, scraping up any browned bits from the bottom of the skillet. Bring the broth to a gentle simmer for about 2 minutes.
  6. Introduce the Cream: Reduce the heat to low. Pour in the heavy cream and stir well to combine. Season the sauce with Italian seasoning, salt, and freshly ground black pepper to taste. Let the sauce gently warm through for 2-3 minutes.
  7. Combine and Wilt: Add the cooked, drained pasta to the skillet with the creamy sauce. Toss until the pasta is fully coated. Add the fresh spinach, stirring until it wilts into the sauce.
  8. Finish with Cheese: Remove the skillet from the heat. Stir in the freshly grated Parmesan cheese until it melts into the sauce. If the sauce seems too thick, add a splash or two of the reserved pasta water.
  9. Serve Immediately: Taste and adjust seasonings. Ladle portions into bowls and garnish with extra grated Parmesan cheese and fresh basil or parsley.

Notes

Feel free to mix and match mushroom varieties and consider adding protein like grilled chicken or sautéed shrimp for a different twist.
