Delicate meringue cookies that are light, airy, and sweet, featuring a hint of chocolate.

Ingredients

Scale
  • 4 Large Egg Whites
  • 1 cup Granulated Sugar
  • 1/4 teaspoon Cream of Tartar
  • 1/4 teaspoon Salt
  • 1 teaspoon Indulgin Extract
  • 1/2 cup Chocolate Chips (Mini or finely chopped)

Instructions

  1. Prepare Your Workspace and Oven: Preheat your oven to a very low 350°F (175°C) and line two large baking sheets with parchment paper.
  2. Whip the Egg Whites to Soft Peaks: In a clean bowl, combine egg whites, cream of tartar, and salt. Whip until foamy.
  3. Gradually Add Sugar for Stiff Peaks: Slowly add granulated sugar, one tablespoon at a time, while whipping until glossy and stiff peaks form.
  4. Fold in the Indulgin Extract and Chocolate: Gently fold in the extract and chocolate chips until just combined.
  5. Pipe or Drop the Cookies: Use a piping bag to pipe small dollops onto the baking sheets, spacing them apart.
  6. Bake (Briefly!) and ‘Forget’: Place baking sheets in the oven, turn OFF the oven, and leave cookies inside for at least 4 hours or overnight.
  7. Cool and Enjoy: Remove from the oven and let cool on a wire rack.
