Warm, savory breakfast burritos filled with fluffy scrambled eggs, turkey sausage or chorizo, and colorful veggies, perfect for meal prep and busy mornings.

Ingredients

  • 8 Eggs
  • 1 lb Turkey sausage or beef chorizo
  • 1 cup Shredded cheddar or Monterey Jack cheese
  • 1 cup Bell peppers, diced
  • 1 cup Onions, diced
  • 1 cup Spinach
  • 8 Flour tortillas, or whole wheat or corn tortillas
  • Salt, to taste
  • Pepper, to taste
  • 1 tsp Taco seasoning
  • Hot sauce, to taste

Instructions

  1. Cook the Breakfast Meat in a large skillet over medium heat until fully cooked. Drain excess fat if necessary.
  2. Toss in diced bell peppers and onions, cooking until they are soft. If using spinach, add it last and cook just until wilted.
  3. Whisk the eggs with a little salt and pepper in a separate bowl.
  4. Pour the eggs into the skillet with the meat and vegetables. Stir gently until the eggs are fully cooked.
  5. Lay a tortilla flat and add a generous scoop of the egg mixture in the center. Sprinkle with cheese and any additional toppings you like. Fold the sides over the filling, then roll from the bottom to the top, securing the filling inside.
  6. Wrap each burrito tightly in plastic wrap or aluminum foil to prevent freezer burn.
  7. Store the wrapped burritos in a freezer-safe bag or container and label them with the date.

Notes

These burritos are customizable; feel free to experiment with different ingredients based on your tastes or what’s in your fridge. Pair with fresh salsa or Greek yogurt.
