Delicious Fresh Grinder Tortellini Salad

A vibrant salad packed with fresh ingredients, perfect for summer gatherings or a light meal.

Ingredients

  • Fresh cheese tortellini
  • Cherry tomatoes
  • Cucumbers
  • Bell peppers
  • Diced beef salami
  • Crumbled feta cheese
  • Olive oil
  • Apple cider vinegar
  • Italian seasoning
  • Salt
  • Pepper
  • Fresh basil

Instructions

  1. Boil the water by bringing a large pot of salted water to a boil.
  2. Cook the tortellini according to the package instructions, usually about 3-5 minutes. Once cooked, drain and rinse under cold water.
  3. Prepare the vegetables by slicing cherry tomatoes in half, dicing the cucumber, and chopping the bell peppers into bite-sized pieces.
  4. Combine the cooked tortellini, chopped vegetables, diced beef salami, and crumbled feta cheese in a large mixing bowl and toss gently.
  5. Whisk together ¼ cup of olive oil, 2 tablespoons of apple cider vinegar, 1 teaspoon of Italian seasoning, salt, and pepper to taste in a small bowl.
  6. Dress the salad by drizzling the dressing over the tortellini mixture and tossing until everything is evenly coated.
  7. Chill in the refrigerator for at least 30 minutes before serving.
  8. Give the salad a gentle toss and taste for seasoning before serving; garnish with additional fresh herbs if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Serve cold or at room temperature.
