A creamy and spicy mayo that enhances the flavor of any dish, perfect for sandwiches, tacos, and more.

Ingredients

  • 2 Fresh Eggs
  • 1 cup Neutral Oil (canola, grapeseed, or sunflower oil)
  • 24 tablespoons Sriracha
  • 1 tablespoon Acid (Lemon Juice or White Vinegar)
  • 1 teaspoon Dijon Mustard (Optional, but Highly Recommended)
  • 1/2 teaspoon Salt

Instructions

  1. Gather room temperature ingredients.
  2. Combine your base ingredients in a tall, narrow jar.
  3. Add the oil on top of the other ingredients.
  4. Blend for emulsion.
  5. Incorporate the remaining oil gradually.
  6. Add your desired amount of Sriracha.
  7. Taste and adjust seasoning as needed.

Notes

Store any leftover mayo in an airtight container in the fridge for up to one week.
