Delightful lemon blueberry biscuits that are buttery, airy, and perfect for brunch or a cozy snack.

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 1 cup fresh blueberries
  • Zest of 1 lemon
  • Juice of 1 lemon

Instructions

  1. Preheat the oven to 425°F (220°C) and grease a baking dish.
  2. Mix together the flour, baking powder, salt, and sugar in a large bowl.
  3. Whisk together the melted butter, milk, lemon zest, and lemon juice in a separate bowl.
  4. Combine the wet ingredients with the dry ingredients, stirring until just combined.
  5. Fold in the fresh blueberries gently.
  6. Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
  7. Cool slightly before cutting and serving.

Notes

For extra lemony flavor, add more zest but adjust the sugar slightly if needed.
