A creamy and flavorful Mediterranean Egg Salad that combines fresh avocados, hard-boiled eggs, and vibrant veggies for a satisfying dish.

Ingredients

  • 2 ripe avocados
  • 4 hard-boiled eggs
  • 1/4 cup red onion, diced
  • 1/2 cup cherry tomatoes, halved
  • 2 tablespoons fresh lemon juice
  • 1/4 cup Kalamata olives, pitted and chopped
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Mash the avocados in a mixing bowl with a fork until smooth.
  2. Chop the hard-boiled eggs and add them to the bowl.
  3. Mix in the red onion, cherry tomatoes, olives, lemon juice, and salt and pepper.
  4. Stir gently until well combined.
  5. Serve on whole grain bread, lettuce wraps, or with crackers.
  6. Garnish with fresh parsley if desired.

Notes

Use perfectly ripe avocados for the best flavor and texture. For added flavor, consider herbs like dill or basil.
