A simple, delightful dessert that captures the essence of home with its sweet-tart cherry filling and flaky crust.

Ingredients

Scale
  • 2 cups cherries (fresh or canned)
  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 pie crust (store-bought or homemade)
  • Butter (for dotting)
  • Optional: whipped cream for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the cherries, sugar, cornstarch, vanilla extract, and lemon juice in a mixing bowl. Stir until well mixed.
  3. Prepare the pie crust by rolling it out and fitting it into a 9-inch pie pan.
  4. Fill the pie crust with the cherry mixture and dot with small pieces of butter.
  5. Add a second pie crust on top, sealing the edges and making slits for steam to escape.
  6. Bake for about 30-35 minutes or until the crust is golden brown.
  7. Cool before serving, optionally with whipped cream.

Notes

Use fresh cherries when in season for the best flavor. You can substitute flour or arrowroot powder for cornstarch if necessary.
