Delightful roasted sweet potato rounds topped with creamy feta cheese and a drizzle of honey, perfect for any gathering.

Ingredients

  • 2 large sweet potatoes
  • 1 cup feta cheese, crumbled
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the sweet potatoes into rounds, about ¼ inch thick, and place them on a baking sheet.
  3. Drizzle the rounds with olive oil, and sprinkle generously with salt and pepper.
  4. Roast in the oven for 20-25 minutes, flipping halfway through.
  5. Remove from the oven and sprinkle crumbled feta on top.
  6. Drizzle with honey before serving.

Notes

For extra flavor, experiment with spices or add greens before the feta. Store leftovers in an airtight container for up to three days.
