Lemon Butter Shrimp Spaghetti

A quick and delicious weeknight dinner featuring succulent shrimp and spaghetti in a creamy lemon butter sauce.

Ingredients

  • 8 oz spaghetti
  • 1 lb shrimp, peeled and deveined
  • 4 tbsp butter
  • 3 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste
  • Red pepper flakes (optional)

Instructions

  1. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  2. Melt the butter in a large skillet over medium heat. Add garlic and sauté until fragrant, about 1 minute.
  3. Add shrimp to the skillet and season with salt, pepper, and optionally, red pepper flakes. Cook until shrimp are pink and cooked through, about 3-5 minutes.
  4. Stir in lemon juice and zest, mixing well to infuse the shrimp with a bright, citrusy flavor.
  5. Add the cooked spaghetti to the skillet, tossing to combine with the shrimp and sauce, ensuring every strand is coated.
  6. Remove from heat, stir in fresh parsley, and serve immediately for the best flavor and texture.

Notes

For a lighter version, substitute butter with olive oil. This dish complements well with a green salad and a chilled glass of white wine.
