A juicy and tender chicken breast recipe made effortlessly in a slow cooker, perfect for comforting weeknight meals.

Ingredients

  • 4 Boneless, Skinless Chicken Breasts
  • 1 cup Chicken Broth (or Stock)
  • 1 tablespoon Olive Oil
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Freshly Ground Black Pepper
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Dried Italian Seasoning (optional)
  • 1 teaspoon Dried Oregano (optional)
  • 1 teaspoon Dried Thyme (optional)
  • 1 tablespoon Lemon Juice (optional)
  • 1 tablespoon Soy Sauce or Worcestershire Sauce (non-alcohol, optional)
  • ¼ to ½ teaspoon Brown Sugar or Maple Syrup (optional)

Instructions

  1. Prepare your chicken by patting them dry with paper towels and pounding them to an even thickness if needed.
  2. Season both sides of the chicken breasts with olive oil and a blend of kosher salt, black pepper, garlic powder, onion powder, and smoked paprika.
  3. Arrange the seasoned chicken breasts in a single layer at the bottom of your slow cooker.
  4. Add the chicken broth over the chicken, covering at least half of the chicken, and mix in any optional flavor boosters.
  5. Cook on LOW for 2-4 hours or HIGH for 1-2 hours until the internal temperature reaches 165°F (74°C).
  6. Rest the chicken after removing it from the slow cooker, tenting it with foil for 5-10 minutes.
  7. Optional: For sauce thickening, whisk cornstarch with water, stir into the hot liquid, and cook on high for 10-15 minutes.

Notes

Ensure chicken breasts are of uniform thickness for even cooking and consider experimenting with different herbs.
