  • 2 cups shredded chicken
  • 34 medium-sized fresh jalapenos, sliced
  • 8 oz full-fat cream cheese, softened
  • 1 cup shredded cheddar cheese
  • Crispy beef bacon or crumbles
  • 6 cups low-sodium chicken broth
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1/2 cup heavy cream
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • Salt to taste
  • Black pepper to taste
  • Olive oil for cooking

Instructions

  1. Start by cooking beef bacon in a large pot until crispy. Remove the bacon and set it aside for later. Use the same pot to cook the raw chicken, seasoning it lightly. Once fully cooked, let it cool before shredding into bite-sized pieces. While the chicken cools, chop the onion, mince the garlic, and slice your jalapenos.
  2. In the same pot, add a drizzle of olive oil and toss in the chopped onions. Cook until softened, stirring occasionally. Add the minced garlic and sliced jalapenos to the mix, sautƩing until they become fragrant.
  3. Push the sautƩed vegetables to the side of the pot. In the cleared area, melt butter and whisk in the flour to create a roux, stirring continuously to avoid lumps. Gradually whisk in the chicken broth, bringing the mixture to a simmer.
  4. Once your broth is simmering, stir in the shredded chicken along with cumin, smoked paprika, cayenne pepper, salt, and black pepper. Let this all simmer together for about 10-15 minutes.
  5. Reduce the heat, then stir in the softened cream cheese until fully melted. Next, pour in the heavy cream, followed by the shredded cheddar cheese. Stir until the cheese is entirely incorporated.
  6. Take a moment to taste and adjust seasonings if needed. Stir in the crumbled beef bacon for that final crunch. Serve hot, garnished with fresh cilantro and a dollop of sour cream.

Notes

Make sure your cream cheese is softened before adding it to the soup. Adjust jalapeno seeds to control the heat level.
