  • 1 cup fresh blood orange juice
  • 1 tablespoon blood orange zest
  • 3 teaspoons baking powder

  • 3 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a cake pan, ensuring you’re ready for the magic to begin!
  2. Cream together the softened butter and granulated sugar until the mixture is light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Mix in the fresh blood orange juice and blood orange zest.
  5. Whisk together the flour, baking powder, and salt in another bowl. Gradually add the dry ingredients to the wet mixture.
  6. Pour the batter into the prepared cake pan.
  7. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool completely in the pan before transferring it to a wire rack.
  9. Create a glaze by mixing powdered sugar with blood orange juice or make frosting with cream cheese and powdered sugar.

Notes

For a denser cake, consider substituting some all-purpose flour with almond flour. Store leftovers in an airtight container for up to 3 days at room temperature or refrigerate for up to 5 days.
