Delightful blueberry cheesecake bars with a buttery crumble crust, perfect for any gathering.

  • 1 cup graham cracker crumbs
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups fresh blueberries
  • 1/4 cup flour
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking dish to prepare it for the crust.
  2. In a bowl, combine graham cracker crumbs, brown sugar, and melted butter. Press the mixture firmly into the bottom of the prepared baking dish to form a sturdy crust.
  3. In another bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth. Add the eggs, one at a time, mixing well after each addition to ensure a creamy filling.
  4. Carefully spread the cream cheese mixture over the crust, ensuring an even layer to catch the blueberries.
  5. In a separate bowl, toss the fresh blueberries with flour and salt to coat them. This helps keep them from sinking to the bottom during baking. Sprinkle them evenly over the cream cheese layer.
  6. For your crumble topping, mix the reserved graham cracker crumb mixture to form a crumb topping. Sprinkle it generously over the blueberries.
  7. Bake for 30-35 minutes, or until the edges turn golden and the center is set. Allow the bars to cool before slicing into squares for serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to a week or freeze for up to a month. Use fresh blueberries for best results.
