A delicious and nutritious blueberry chia seed pudding that’s easy to prepare and perfect for breakfast or dessert.

Ingredients

Scale
  • 1/4 cup chia seeds
  • 1 cup milk (or plant-based alternative)
  • 1 cup fresh blueberries
  • 12 tablespoons sweetener (honey, maple syrup, or sugar, optional)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Mix chia seeds, milk, sweetener, and vanilla extract in a bowl.
  2. Let it sit for about 10 minutes.
  3. Stir again to prevent clumping of chia seeds.
  4. Cover the bowl and refrigerate for at least 2 hours or overnight for best results.
  5. Add fresh blueberries once thickened.
  6. Serve in jars or bowls, optionally topped with more blueberries and a drizzle of sweetener.

Notes

Ensure the chia seed-to-liquid ratio is right for the desired pudding consistency. For a creamier pudding, use less chia; for a thicker consistency, add more chia seeds and refrigerate for longer.
