A vibrant and luscious blueberry curd that captures the essence of summer, perfect for spreading or filling desserts.

  • 1 cup granulated sugar
  • 1/4 cup fresh lemon juice
  • 1/2 cup unsalted butter, cubed
  • 4 large egg yolks
  • 1/4 teaspoon salt

Instructions

  1. Simmer the berries: In a saucepan, combine the blueberries, sugar, and lemon juice. Cook over medium heat until the blueberries release their juices, about 5-7 minutes.
  2. Strain the mixture: Once softened, strain the mixture through a fine mesh sieve to remove solids.
  3. Whisk the yolks: In the same saucepan, whisk together the egg yolks and salt until well-combined.
  4. Combine and cook: Gradually pour in the blueberry juice while whisking the yolks. Cook over low heat, stirring continuously until thickened, about 8-10 minutes.
  5. Add butter for creaminess: Remove from heat and stir in the cubed butter until melted and smooth.
  6. Cool and enjoy: Let the curd cool to room temperature before using.

Notes

Store the blueberry curd in an airtight container in the refrigerator for 1-2 weeks, or freeze for up to three months.
