Ingredients

Scale
  • 1/4 cup chia seeds
  • 1 cup almond milk (or any milk of choice)
  • 2 tablespoons cocoa powder
  • 2 tablespoons maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Whisk together the almond milk, cocoa powder, maple syrup, vanilla extract, and salt until smooth.
  2. Add the chia seeds to the bowl and stir well to combine.
  3. Let the mixture sit for 5-10 minutes, then stir again to break up any clumps.
  4. Chill the bowl and refrigerate for at least 2 hours or overnight until thickened.
  5. Serve your chilled pudding topped with fresh fruits or nuts.

Notes

For a less sweet version, reduce the maple syrup or honey. This pudding can be stored in an airtight container in the refrigerator for up to 3 days.
