A delightful, dairy-free frosting made with coconut milk, perfect for cakes and cupcakes.

Ingredients

  • 1 can of coconut milk (chilled)
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cornstarch (optional for stability)

Instructions

  1. Chill the coconut milk overnight in the fridge.
  2. Scoop out the solidified coconut cream into a mixing bowl.
  3. Whip the coconut cream with an electric mixer until smooth and fluffy.
  4. Sweeten by sprinkling in the powdered sugar and vanilla extract while whipping.
  5. Add cornstarch if desired for stability and mix until combined.
  6. Continue whipping until the mixture holds stiff peaks.
  7. Use immediately or store in the refrigerator for later use.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Whip again if it hardens.
