A vibrant and crunchy coleslaw featuring tart apples and chewy cranberries, perfect as a refreshing side dish.

Ingredients

  • 1/2 head green cabbage (about 4 cups shredded)
  • 2 medium apples (such as Granny Smith or Honeycrisp)
  • 1/2 cup dried cranberries
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Shred the cabbage finely using a knife or mandoline slicer and place it in a large mixing bowl.
  2. Core and dice the apples into small pieces, then add them to the bowl with the cabbage.
  3. Toss the dried cranberries into the bowl.
  4. Whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper in a separate bowl until smooth.
  5. Pour the dressing over the cabbage, apples, and cranberries and toss well to coat.
  6. Stir in the chopped walnuts if desired.
  7. Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.

Notes

Great as a side for roasted meats or summer barbecues. Store leftovers in an airtight container for up to 3 days.
