  • ½ cup powdered sugar
  • ½ cup unsalted butter, softened
  • 1 egg yolk
  • 12 tablespoons cold water, as needed
  • 2 cups eggnog
  • 4 large egg yolks
  • ½ cup granulated sugar
  • ¼ cup cornstarch
  • 1 teaspoon ground nutmeg
  • ½ teaspoon ground cinnamon
  • Pinch of salt
  • 1 teaspoon vanilla extract
  • 1 cup granulated sugar (for caramel)
  • ¼ cup water (for caramel)
  • Pinch of salt (for caramel)

Instructions

  1. Prepare the Tart Crust: In a mixing bowl, combine the flour and powdered sugar. Add the softened butter and mix until crumbly. Incorporate the egg yolk, followed by cold water one tablespoon at a time until the dough comes together. Shape it into a disk, wrap in plastic, and refrigerate for 30 minutes.
  2. Bake the Crust: Preheat your oven to 350°F (175°C). Roll out the chilled dough on a floured surface and fit it into a 9-inch tart pan. Prick the bottom with a fork and line it with parchment paper, adding pie weights or beans. Bake for 15 minutes, then remove the weights and bake for an additional 10 minutes until golden. Let cool completely.
  3. Whisk the Eggnog Filling: In a saucepan over medium heat, combine eggnog, egg yolks, granulated sugar, cornstarch, nutmeg, cinnamon, and salt. Whisk continuously until the mixture thickens and starts to bubble. Remove from heat and stir in the vanilla extract.
  4. Fill the Tart Shell: Pour the warm eggnog filling into the cooled tart crust, smoothing the top with a spatula. Chill in the refrigerator for at least 3 hours until set.
  5. Prepare the Caramel Shards: In a saucepan, mix the sugar, water, and salt. Bring to a simmer over medium heat without stirring until it turns a golden amber color. Carefully pour the caramel onto a parchment-lined baking sheet and let it cool completely. Once hardened, break into shards.
  6. Garnish and Serve: Remove the tart from the refrigerator. Decorate with caramel shards on top before slicing. Serve chilled and enjoy the holiday cheer it brings!

Notes

For a chocolate twist, fold in some melted chocolate into the eggnog mixture before pouring into the crust. Store any leftovers covered in the refrigerator for up to 3 days.
