High-Protein Cottage Cheese Lava Cake

A wholesome twist on a classic dessert that combines indulgence and nutrition for a guilt-free treat packed with protein.

Ingredients

  • 1 cup low-fat cottage cheese (240g)
  • 2 large eggs
  • 1/4 cup cocoa powder (30g)
  • 1/4 cup granulated sweetener (50g)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon baking powder
  • 1 pinch salt
  • 1 tablespoon dark chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Blend the low-fat cottage cheese until smooth and creamy.
  3. Add the eggs to the blended cottage cheese and mix until well combined.
  4. Sift in the cocoa powder to avoid lumps.
  5. Sweeten the mixture by adding the granulated sweetener, vanilla extract, baking powder, and pinch of salt; combine until smooth.
  6. Fold in the dark chocolate chips if using.
  7. Prepare your bakeware by greasing ramekins or a small baking dish.
  8. Pour the batter evenly into the prepared dish(es).
  9. Bake for 15-20 minutes until set on the edges and slightly jiggly in the center.
  10. Rest the cake for about 5 minutes before serving warm.

Notes

Serve warm with yogurt or whipped cream; pairs well with fresh berries.
