A nostalgic treat that brings back memories of homemade divinity candy, light and airy, perfect for sharing with loved ones.

Ingredients

Scale
  • 2 1/2 cups granulated sugar
  • 1/2 cup light corn syrup
  • 1/2 cup water
  • 2 large egg whites
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts (optional)

Instructions

  1. Combine the sugar, corn syrup, and water in a heavy-bottomed saucepan. Stir gently until the sugar dissolves completely.
  2. Measure the temperature by clipping a candy thermometer to the side of the pan and continue to cook over medium heat.
  3. Cook without stirring until the mixture reaches 260°F (the hard-ball stage).
  4. Beat the egg whites and salt in a large bowl with an electric mixer until stiff peaks form.
  5. Combine the beaten egg whites and hot sugar by slowly pouring the hot mixture over the egg whites while continuing to beat.
  6. Beat for about 5-10 minutes until the mixture thickens and loses its glossy appearance.
  7. Add the vanilla extract and folded in the chopped walnuts, if using.
  8. Drop rounded spoonfuls of the mixture onto waxed paper.
  9. Let the divinity cool completely until set.
  10. Store in an airtight container to keep fresh.

Notes

Ensure your mixing bowl and beaters are clean for the best egg white peaks. Store divinity in an airtight container away from moisture.
