Italian Sausage White Bean Soup

A comforting and hearty soup made with savory turkey sausage, creamy white beans, and vibrant spinach.

Ingredients

  • 1 tablespoon (15ml) olive oil
  • 1 pound (450g) turkey sausage, casings removed
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups (1.4 liters) vegetable broth
  • 2 cans (15 ounces each / 425g each) white beans, drained and rinsed
  • 1 can (14.5 ounces / 410g) diced tomatoes
  • 1 teaspoon (5g) dried oregano
  • 1 teaspoon (5g) dried basil
  • Salt and pepper to taste
  • 2 cups (60g) fresh spinach

Instructions

  1. Heat the olive oil in a large pot over medium heat until shimmering.
  2. Add the turkey sausage to the pot, breaking it into small pieces, and cook until browned, about 5-7 minutes.
  3. Stir in the chopped onion, diced carrots, and celery. Cook until softened, about 5 minutes.
  4. Add the minced garlic and cook for an additional minute.
  5. Pour in the vegetable broth, followed by the drained white beans and diced tomatoes. Sprinkle in the oregano and basil. Bring to a boil.
  6. Reduce the heat to low, cover the pot, and let the soup simmer for 20 minutes.
  7. Season the soup with salt and pepper to taste.
  8. Stir in the fresh spinach and cook until wilted, about 2 minutes.
  9. Dish up the warm soup into bowls and top with grated Parmesan cheese, if desired.

Notes

This soup pairs well with crusty bread and a side salad. It can be stored in the fridge for up to 4 days or frozen for up to 3 months.
