A refreshing and healthy Lemon Chia Pudding that satisfies sweet cravings with zesty lemon flavors.

Ingredients

Scale
  • 2 tablespoons chia seeds
  • 1 cup almond milk (or any milk of choice)
  • 2 tablespoons honey or agave syrup
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Combine the chia seeds, almond milk, honey (or agave syrup), lemon zest, lemon juice, vanilla extract, and a pinch of salt in a bowl. Stir well to mix everything together.
  2. Let the mixture sit for about 10 minutes to allow the chia seeds to start absorbing the liquid and prevent clumping.
  3. Stir again after the initial 10 minutes to ensure the chia seeds are evenly distributed throughout the mixture.
  4. Chill by covering the bowl and refrigerating for at least 2 hours, or preferably overnight.
  5. Serve the pudding chilled, garnished with additional lemon zest or fresh fruit if desired.

Notes

For an extra lemony kick, add more zest or juice. Leftovers can be stored in an airtight container in the refrigerator for 3-5 days.
