A comforting low-calorie dish featuring vibrant spaghetti squash topped with marinara sauce and shredded chicken.

Ingredients

Scale
  • 1 medium spaghetti squash (approx. 3 lbs)
  • 2 cups low-sodium marinara sauce
  • 2 cups cooked chicken breast (shredded)
  • 1 tbsp olive oil
  • 1/2 cup shredded low-fat mozzarella cheese
  • 1/4 cup fresh basil leaves (chopped)
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Carefully slice the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with olive oil and sprinkle with salt and pepper. Place cut-side down on a baking sheet lined with parchment paper and roast for 40 minutes, or until the flesh is tender and easily pulls apart into strands.
  2. While the squash is roasting, shred your cooked chicken breast. If you’re short on time, store-bought rotisserie chicken works wonderfully here! Set it aside in a large mixing bowl.
  3. Once the chicken is ready, pour the low-sodium marinara sauce into the bowl. Give it a gentle mix to combine, ensuring every shred of chicken is coated in that rich, savory sauce.
  4. When the spaghetti squash is done roasting, remove it from the oven and let it cool for a few minutes. Use a fork to scrape the strands into a serving dish. Pour the chicken and marinara mixture over the spaghetti squash, ensuring it’s evenly distributed.
  5. Sprinkle the low-fat mozzarella cheese generously on top of the chicken and sauce mixture. The cheese will melt beautifully, creating a lovely, gooey layer that connects all the flavors.
  6. Finish off your dish with fresh, chopped basil. The aroma will fill your kitchen, inviting you to dive right into this delightful meal.
  7. Serve immediately while it’s warm and comforting. Each bite is inviting, paired perfectly with a delightful salad or steamed vegetables.
