A tropical dessert with a creamy, tangy filling and a buttery graham cracker crust, topped with fresh mango puree.

Ingredients

Scale
  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup key lime juice
  • 1 cup coconut cream
  • 1 cup fresh mango puree
  • 1 tablespoon lime zest
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8-inch square baking dish.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture evenly into the bottom of the prepared baking dish. Bake for 10 minutes and then cool.
  3. In a large mixing bowl, whisk together sweetened condensed milk, key lime juice, coconut cream, lime zest, and salt until smooth.
  4. Pour the filling over the cooled crust and bake for an additional 15-20 minutes, or until the filling is set but slightly jiggly.
  5. Allow to cool, then refrigerate for at least 2 hours until firm.
  6. Before serving, spread the mango puree over the top of the bars.
  7. Cut into squares and serve chilled.

Notes

For a gluten-free version, use gluten-free graham crackers. Experiment with different fruit toppings or add rum for a tropical twist.
