Homemade Passion Fruit Curd

A luscious passion fruit curd that brings a taste of tropical sunshine to your kitchen.

Ingredients

  • 1 cup passion fruit juice (fresh or bottled)
  • 1 cup granulated sugar
  • 4 large eggs
  • 1/2 cup unsalted butter, cut into pieces
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Combine passion fruit juice and sugar in a saucepan over medium heat, stirring until the sugar dissolves.
  2. Whisk the eggs in a bowl until well blended.
  3. Temper the eggs by slowly adding a small amount of the warm fruit mixture while whisking constantly, then gradually pour back into the saucepan.
  4. Cook over medium-low heat, stirring constantly until the mixture thickens, about 10-12 minutes.
  5. Incorporate the butter pieces until melted and smooth.
  6. Strain the curd through a fine-mesh sieve into a bowl to remove solids.
  7. Add the vanilla extract and stir well.
  8. Cool to room temperature, then transfer to an airtight container and refrigerate.

Notes

Adjust sweetness to taste by adding more sugar if desired. Fresh passion fruit juice is recommended for best flavor.
