Delicious and nutritious quinoa protein muffins, perfect for a busy morning or an evening snack.

Ingredients

  • 1 cup cooked quinoa
  • 1 cup oat flour
  • 1/2 cup protein powder
  • 1/4 cup honey or maple syrup
  • 1/4 cup unsweetened almond milk
  • 2 eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup fresh berries (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the cooked quinoa, oat flour, protein powder, baking powder, and salt in a large bowl.
  3. Whisk together the honey (or maple syrup), almond milk, eggs, and vanilla extract in a separate bowl.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the berries if using.
  6. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow to cool slightly before enjoying.

Store in an airtight container for up to 3 days at room temperature or freeze for up to 3 months.
