A vibrant and nutritious salad combining quinoa with fresh vegetables and herbs, perfect for summer meals.

Ingredients

Scale
  • 1 cup quinoa
  • 2 cups water
  • 1/2 teaspoon salt
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • Salt and pepper to taste
  • 1/2 cup crumbled feta cheese (optional)

Instructions

  1. Rinse the quinoa thoroughly in a fine-mesh strainer under cold running water for about 2 minutes.
  2. In a medium saucepan, combine the rinsed quinoa, water, and 1/2 teaspoon salt.
  3. Bring to a boil over high heat.
  4. Reduce heat to low, cover, and simmer for 15 minutes until the quinoa is tender and the water is absorbed.
  5. Remove from heat and let stand covered for 5 minutes. Fluff with a fork and transfer to a large bowl to cool completely.
  6. While the quinoa cools, dice the cucumber, halve the cherry tomatoes, finely chop the red onion, and chop the fresh parsley and mint.
  7. In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper to make the dressing.
  8. Once the quinoa has cooled, add the cucumber, cherry tomatoes, red onion, parsley, and mint to the bowl.
  9. Pour the dressing over the salad and toss gently to combine.
  10. Sprinkle feta cheese over the top if using.
  11. Refrigerate the salad for at least 30 minutes before serving. Taste and adjust seasoning before serving.
