Delicious roasted cabbage steaks that transform a simple vegetable into a caramelized, flavorful dish, perfect as a side or a main attraction.

Ingredients

Scale
  • 1 large head of green cabbage (approx. 1.5–2 lbs / 700-900g)
  • 2–3 tablespoons (30-45ml) olive oil
  • 1 teaspoon (5g) salt
  • 1 teaspoon (5g) garlic powder
  • 1 teaspoon (5g) paprika
  • ¼ teaspoon (1g) red pepper flakes (optional)

Instructions

  1. Slice the cabbage by cutting off the bottom stem, then halve it through the core and slice each half into ¾ to 1-inch thick ‘steaks’.
  2. Prepare the baking sheet by lining it with parchment paper to prevent sticking.
  3. Brush the top side of each cabbage steak generously with olive oil.
  4. Season with half the salt, garlic powder, and paprika.
  5. Flip the cabbage steaks and season the other side with the remaining olive oil, salt, garlic powder, and paprika, adding red pepper flakes if desired.
  6. Roast in a preheated 400°F (200°C) oven for about 25 minutes until browned and tender-crisp.

Notes

Cabbage steaks can be served with various dips and pair well with grilled meats or as a vegetarian option. Store leftovers in an airtight container for up to 3 days.
